[lld-macho] Fix category merging category map non-determinism (#91159)

Currently in `ObjcCategoryMerger::doMerge` and
`generateCatListForNonErasedCategories` we use maps of pointers which
leads to non-determinism. Switch instead to using `MapVector` which
preserves determinism.
