Converted the Windows-dependent build.bat into a build.sh shell script.

Turns out Windows msys and Linux cp -R behavior is identical - OS X is the odd one out.  So, redid the filtering.

Fixes the shell build for Mac systems - the resource copy path behavior appears to differ on the two OSes.
