chore(common): fix child build error handling

Paths that describe outputs are supposed to be relative to root,
not absolute. Also, it turns out we don't use the `--output`
parameter, so this change removes it.

This sets the distribution to "unstable" instead of the default
UNRELEASED which dput doesn't look to upload.

Fixes #8322.

This issue was arising due to subshells masking the exit code.

set -e is not really to be trusted.
