[gitattributes] Don't mark all llvm-rc test Inputs as binary (#68583)

This allows tooling to properly show diffs for files in the
llvm/test/tools/llvm-rc/Inputs directory.

Keep the actual icon/cursor/bitmap files marked as binary.
