[TwoAddressInstruction] Update LiveIntervals after INSERT_SUBREG with undef read (#66211) 

Update LiveIntervals after rewriting:
  %reg = INSERT_SUBREG undef %reg, %subreg, subidx
to:
  undef %reg:subidx = COPY %subreg

D113044 implemented this for the non-undef case.
