[libcxx] [cmake] Fix cmake_path(ABSOLUTE_PATH) for empty CMAKE_INSTALL_PREFIX 

This should hopefully fix the issue brought up at
https://github.com/llvm/llvm-project/pull/85756#issuecomment-2009852291.
