[X86] Rename VPERMI2/VPERMT2 to VPERMI2*Z/VPERMT2*Z (#75192) 

Add missing AVX512 Z prefix to conform to the standard naming convention and simplify matching in X86FoldTablesEmitter::addBroadcastEntry etc.
