Refactor EnumAnnotations and EnumFactory (#1747)

This is a nit fix. no logic is changed.

* Rename `typeName` to `enumTypeName` in ScalaDoc
* Add return type at public method
* Rename `enum_records` into `enumRecords` to retain name consistency
